In 2012, we started selling coffee at the Karmeliter Market in a joint project with the company Kaas am Markt. The coffee stand was born. We sold exclusively organic and Fairtrade certified coffees there. But something was still missing: an organic and Fairtrade coffee blend with a small percentage of Robusta. Such coffees were rare at the time, as many producers sold their organic and Fairtrade certified Arabica beans as single varieties and didn't want to blend them with Robusta. Furthermore, there were only a handful of Robusta coffee varieties in the world that had both organic and Fairtrade certification. So we created the Karmeliter blend, an Italian blend with 10% Robusta. This Robusta comes from Tanzania.
The Carmelite blend has a strong and sweet flavor, especially when prepared in an espresso machine at moderate temperatures (up to a maximum group head temperature of 92 degrees Celsius). It is very popular with our customers as a more relaxed version of the Scarlatti blend for use in a stovetop espresso maker, where milk chocolate notes take center stage. When milk is added after brewing, the Carmelite blend develops a delicate sweetness.
